Making Your Own Greek Style Yoghurt

Line a strainer with cheesecloth, strong paper towel, or a coffee-filter. Set this on top of a pitcher or bowl.Place plain yoghurt inside the strainer and let the liquid whey drain from it until you are satisfied that it is thick enough. Liquid is a great thing, but when it makes your yoghurt all wobbly, getting it out is paramount for maximum creaminess. The whey can be stored in a jar and mixed with greens for your morning health drink. Making your own "Greek" yoghurt is superior to buying it at the store in cartons, since most of those products will be artificially thickened or, if it is done properly through straining, will be very expensive. It's better to find a high-quality pure yogurt and strain it at home--you can even make yoghurt cheese by straining the stuff a bit more thoroughly. ©M-J de Mesterton
